Spelt Pancakes (Going Back to The Roots)


Spelt (Triticum spelta), also known as Dinkel wheat,[2] or hulled wheat,[2] is a species of wheat cultivated since 5000 BC.

Spelt was an important staple in parts of Europe from the Bronze Age to medieval times; it now survives as a relict crop in Central Europe and northern Spain and has found a new market as a health food. Spelt is sometimes considered a subspecies of the closely related species common wheat (Triticum aestivum), in which case its botanical name is considered to be Triticum aestivum subsp. spelta. I made some fluffy pancakes yesterday with spelt flour and I was thinking that people want to return to the roots.

Let me explain myself: Nowadays in the supermarkets, there are so many foods, so many inventions of sweets, so many boxes with instant cookies and cakes and so on. We say that the world has advanced in knowledge and that we are smarter that we were years before. But with so many inventions, automatically, there are so many junks in the terms of food.

rarely you find something sweet that is healthy, only to vegan shops or organic and are more expensive. And that doesn’t mean that those sweets are very healthy.

I like the fact that people started realizing that most of the food in the supermarkets are not healthy, have a lot of sugar, salt, preservatives, colorants, citric acid and they make a cleanse through their diet, that’s why a lot of them have become vegetarians and vegans.

I also changed my thinking about food and my diet in general, because I watch what I eat, I watch the labels and I buy what I think it’s best for us.

One important thing in our lives is that we don’t go to fast-foods, in the past we would go, but rarely. I use whole wheat flour very much, wheat rice and pasta, I try some other flours as well, we drink coconut milk, soy, almond, rice, in the coffee as well and we use brown sugar.

We eat a lot of vegetables, fruits, we have a lot of days when we don’t eat meat.
I think these are small steps but it matters for us and for our health.

Some foods are more expensive, but we are only two, and they last for some time.

I wrote in the title “Going back to the roots” thinking of our grandparents, they would go to the mill and grind they’re own flour of they’re cereals and not only that. They would make cheese and yogurt from they’re own cow’s milk and they were fine, they lived a long life.

The world has advanced but I guess it’s not for good.

Of course, they ate healthy, because they had all the food in they’re garden and pantry, made all with their hands.
I miss those times..

I remember my grandmother would make smoked sausage and then she would put the sausages into a big jar full of grease. That was really good :).
Those were simple and gorgeous times when we would eat slices of bread with grease and tomatoes from our garden, or lard with onions.

Everything was so simple and perfect in its simplicity, we didn’t need so many food inventions because nothing could replace those times.

The proof: We want to go back to those times, at least we try because we realized that those times were perfect in their simplicity.
