For our family, the holidays are all about peace, relaxing and to be with each other. We don’t like all that fuss that is about this season.
We like to be with each other, to listen to music, to cook a comfort food and to stay cozy.
For our comfy dinner, we made squid with potatoes.
Ingredients for 2 portions:
- 200 g of squid rings, washed
- 2 potatoes, cut in pieces
- 1 bay leaf
- 150 g green peas
- 1 small onion, chopped
- 2 small tomatoes, chopped very fine
- 50 g of almonds, chopped
- salt, pepper, parsley
- 1 clove of garlic, minced
In a pan, cook the onion 3-4 minutes, add the garlic and cook 2 more minutes. Toss in the tomatoes. After a couple of minutes add the squid and fry it a little bit.
When the tomatoes have left some juice, after 4-5 minutes, add the peas, potatoes and cover the pan with water.
Now you can add the bay leaf, a little bit of parsley, but you can let some for the final touch, and salt and pepper. I put as well a little bit of chili, but that’s optional.
You cook it for 20 minutes until the squid is cooked. And then, if needed, you season again, you add the remaining parsley and the almonds.
And our comfort food is done, in less than 30 minutes.
