Lentil Soup with Chorizo Sausage

The first time I ate Lentil Soup with Chorizo Sausage at my parents in law. Before that, I had no idea what lentil was. Since then, it’s my favorite soup and we eat it very often.

Lentil Soup with Chorizo Sausage

Ingredients:

  • 200 g lentil (soaked 1/2 hour)
  • 50 g chorizo
  • 1 chopped onion
  • 1 big carrot
  • 1/2 bell pepper
  • salt and freshly ground pepper
  • 2 bay leaves
  • 1 teaspoon of tomato paste
  • 1 teaspoon of paprika

You have to wash the lentil very well to get rid of all the dirt. Pour the lentil into a strainer and wash it in cold water and then let it soak for 30 minutes.

In the meantime, slice the chorizo and cut the vegetables into small pieces.

In a big pot, add the chorizo and fry it for 2 minutes, without any oil, because the sausage releases its own fat and it’s enough. Add the vegetables and saute everything for 10 minutes.

Season with salt, pepper, tomato paste, and paprika. Take the pot off the heat and stir for a few seconds.

Add the lentil, the bay leaves and 3 L of water. Bring the soup to a boil and then, let it simmer until the vegetables and the lentils are cooked through, approximately 30 minutes.
