Coconut Rice Pudding

I’ve been eating this dessert since I have been a little girl and I loved it, I still do. It’s very easy to make, and you can use some leftover rice like I did or you can make it with pudding rice. I had some white leftover rice but I made as well with brown rice and it tastes great either way.

Coconut milk gives to the rice such a beautiful flavor that you will eat the entire bowl.

Ingredients:

  • leftover rice or pudding rice
  • coconut milk
  • agave or honey
  • some slices of a fruit of your choice
  • sliced almonds (optional)

I had in the fridge leftover cooked rice so I just warmed the milk and put the rice in the pot where the milk was.

I stirred so that I could warm the rice too. I did not boil the rice and milk mixture, I simmered it.

I put the mixture in a bowl, I added some kiwi slices, I put some sliced almonds and a drizzle of agave syrup.

And I ate the entire bowl and I’m not even sorry 🙂

      • So I couldn’t have your recipe for breakfast because I had promised my son coconut fried rice for our Sunday lunch but it’s still top of mind. Perhaps for breakfast tomorrow, if I can manage it. I love trying new recipes

        • Well, I would like to try the recipe for coconut fried rice. I love coconut rice.How do you make that?

          • I bring my coconut milk and spices to a boil. In it I have my curry, chicken stock, salt, black pepper. Then I add my washed rice. Then I prep my vegetables- carrots, green peppers, green beans and shrimps and sweet corn. By the time I’m done steaming my vegetables, the rice should be ready. Then I stir fry the rice gradually into my vegetables and it’s done. My son had 3 plates of that for lunch. I’m glad he liked it that much

          • This looks good and simple. I will try it. It’s good when kids eat veggies and they like it, it’s not that common.
