Quick Tortellini Recipe

Today I made again one of our favourite meals Lentil soup, recipe  here. We love this meal very much, the whole family actually. I make it 3 times a month I think.

It’s very good, is a traditional Spanish recipe, with chorizo sausage and potatoes. I don’t always add potatoes, I add more of other vegetables. We live in Spain so I like to learn new Spanish recipes.

Tip: I always buy fresh vegetables, more that I need and then I slice and freeze them. I like to buy vegetables that are on sale and to freeze them for later use. I find this practical for our house, I don’t expect to work for everybody. I always have in my freezer sliced carrots, celery, parsnips, bell pepper, leeks, peas and I throw them directly into my pot, for me, this is practical because I don’t need to stay and chop all of my vegetables for every meal. I make this in one day and freeze them all individually.

The same thing I do with the greens, parsley, celery leaves, chives, dill.

I buy a batch of everything, I chop them finely and store them in little plastic boxes, individually. This way I always have fresh leaves on hand.

The recipe that I made today for our lunch is very easy, I made it with what I had in the fridge, so I improvised. So you don’t have to make the exact recipe, improvise if you don’t have an ingredient on hand, that’s the beauty of cooking. ๐Ÿ™‚

Ingredients:

  • a bag of cheese tortellini (250 g)
  • 2 hands of spinach (what you can grab in 2 hands), aprox.
  • salt, pepper, oregano, olive oil
  • 1/2 stalk of celery or celery root chopped
  • 2 small carrots, sliced
  • 50 g peas
  • 3 tablespoons of ricotta cheese
  • 1/2 a bell pepper

Heat the olive oil in a big pan. Add the vegetables and sweat for 5 minutes.

Cook the tortellini in salted boiling water.

Season.

Add some pasta water to the pan and let simmer, until the vegetables are almost cooked, I like the carrots to be a little crunchy. Add 2 hands of spinach and stir until it wilts.

Add the ricotta cheese and stir well. Add the tortellini and stir everything together.

The vegetables and the tortellini should cook at the same time.

It’s easy to make and it’s very tasty.

Ingredients
