Cream Cheese Pancakes

You know already how I like to improvise in the kitchen and make beautiful meals and desserts for me and my husband.

For me, cooking has become something that I truly enjoy, it relaxes me.

Today, because it’s Saturday I made again pancakes for us, but I made them a little different, the main difference is that I made these pancakes with cream cheese.

I wasn’t sure how they’ll turn out, but they’re very tasty, so I encourage you to try and make them.

Ingredients:

  • aprox. 250 g flour of your choice
  • 100 g cream cheese
  • 1 egg
  • aprox. 100 ml milk
  • vanilla extract (I have homemade)
  • 1/4 teaspoon baking soda
  • 2 tablespoons of brown sugar
  • a little bit of salt
  • 3 teaspoons of lemon juice + lemon zest
  • poppy seeds (optional)

First of all, everything has to be at room temperature.

In a glass, put the cream cheese and cream it with a fork, until it becomes smooth. Add the egg, the lemon juice and zest, vanilla extract and the milk and stir everything together, until there are no lumps.

In a big bowl add the flour, baking soda, sugar, salt and poppy seeds if you are using (I put poppy seeds because my husband likes them). Add the milk mixture and stir everything together.

The batter has to be like the batter of a cake.

Heat a drop of sunflower or grapeseed oil in a big pan and then turn the heat to medium and make the pancakes.

I can make two at a time in my pan.

With these quantities, you can make around 10 medium pancakes.

To go with the pancakes, I made a sauce.

For this sauce you will need fresh or frozen berries, I had frozen.

Thaw the berries and then transfer them into a small pot, add 2 tablespoons of brown sugar and let them simmer for 10 minutes aprox.

After that, your pancakes are ready, the sauce is ready, so make a cup of coffee or tea and dig in :).

    • I wanted to add a name that has something to do with cooking, but I didn’t found one, this one always came to my mind, I love books, lavender is my favorite flower and I also love cooking. I had lavender in my bride bouquet 🙂 . Really are delicious these pancakes, I was kinda sceptical at first but they’re amazing. Thanks for stopping by. 🙂
