Green Cream Soup

You guys, you really need to try this cream soup recipe, I guess I have a new favorite now. πŸ™‚

Is really really good and so extremely simple, I made it in less than 30 minutes, so you can really make it every day, in the middle of the week as well.

Ingredients:

  • aprox. 400 g of frozen peas
  • one onion
  • salt and pepper
  • olive oil
  • thyme
  • parmesan cheese

I suggest you use frozen or fresh peas, not canned.

The peas from a can are already cooked, are more soften and they contain citric acid, sodium, sulfites and other ingredients.

I rarely use canned vegetables, I prefer to use frozen or, of course, fresh and freeze them myself.

Heat a tablespoon of olive oil in a pan and then sweat the onion in it for 4-5 minutes.

Season the onion with salt, pepper and thyme, fresh or dried.

Add the peas. You can add frozen peas directly to the pot, you don’t have to thaw them, I always add the vegetables in the pot frozen, I don’t thaw them.

Add water or stock to cover the peas, what do you prefer, and bring to a boil.

Reduce the heat and let simmer for 10 minutes, until the peas are cooked.

Season again if it’s needed and blend the soup.

Serve it warm.

I serve it with shaved parmesan and some black pepper.
