Zucchini Frittata

This frittata is for my husband’s breakfast, to kick it up a notch because he kinda eats the same things every morning.

2 weeks ago I made my first frittata and it was with zucchini. I had one zucchini in the fridge and I thought I could make a frittata and my husband loved it, he ate it all at breakfast.

It’s really easy to make, you’ll see.

 

Ingredients:

  • 1 zucchini
  • 4 eggs
  • parsley leaves
  • dill
  • salt and pepper
  • olive oil

Start by slicing thinly the washed zucchini.

In a small skillet, heat the olive oil and add the zucchini. Fry them and all sides until they become soft.

Meanwhile, in a small bowl break the eggs, season with salt and pepper, add the parsley leaves and dill and stir everything together with a fork, until well combined.

When the zucchini is soft, add the eggs on top and let them cook for 4 minutes aprox.

Put a big plate on top of the skillet and turn the skillet upside down, so that the frittata would be on the plate.

Return the frittata to the skillet. Let it cook on the other side too and it’s done.

Take it out on a clean plate and serve it.
