Nice Dinner With My Husband (Cauliflower soup+Salad)

I really like to prepare delicious meals for my beautiful husband. He comes tired from work and I want our house to be a comfort place, where he finds peace, where we can talk through dinner and drink tea standing on the couch.

Yesterday I made a beautiful dinner for us to enjoy together. It was easy to eat, not heavy (especially on my sensible stomach), and it was very nice.

I made a creamy cauliflower soup, but creamy without the cream 🙂 and a salad with another creamy dressing, a yogurt dressing. It was delicious. I don’t want to brag, but really, it was. 🙂

I started by making the cream soup. I had a cauliflower in the fridge because I wanted to make a cream soup this week, but I didn’t know when it would be the perfect day to make it.

For this delicious soup you will need:

  • a head of a small cauliflower, cut into florets
  • one big potato cut into cubes
  • one onion
  • salt and pepper
  • olive oil
  • stock (my recipe here ) or water

Prepare everything. Wash and cut the vegetable. Set them aside.

Chop the onion.

In a big pot heat the olive oil. Add the onion and sweat for 5 minutes.

Season with salt and pepper.

Add the potato and the cauliflower florets and stir a little.

Add the stock or water and bring to a boil.

Turn down the heat and let it simmer for 20 minutes, until the potato is cooked through.

Let it cool for 10 minutes and then blend everything, until you reach the desired consistency.

And voilà! You have made a beautiful and creamy soup without the cream.

! The key is to add stock (or water) just to cover the vegetables, this way your soup will be creamier.

The next thing I did, was a salad. We love salads, especially in the summer, we talked about this and this summer we want to eat salads almost every day.  You can make so many different recipes and dressings, it’s amazing. It doesn’t matter if it’s with some kind of meat or not.

You will need for this salad:

  • one piece of salmon
  • greens of your choice (we had a mix of greens)
  • chopped almonds
  • sliced cherry tomatoes
  • chives
  • some pomegranate seeds
  • feta cheese (if you want, I did not have at the moment, but it works great)

Grill the salmon until is cooked through. Set aside.

In a big bowl prepare the salad. Add the greens, the pomegranate seeds, the tomatoes, feta cheese, teared up salmon and almonds.

Stir everything.

Dressing:

  • a plain yogurt
  • the juice of 1/2 a lemon
  • dried chili
  • parsley
  • dill
  • some sunflower seeds
  • 1 clove of garlic, crushed
  • salt and pepper
  • a drizzle of olive oil

In another bowl add the ingredients for the dressing and stir.

Serve 🙂
