Tortellini Salad

UPDATE: Look what we ate today with the rest of the tortellini salad 🙂

I baked salmon for us with just salt and pepper and it was really tasty with the salad.

You can try it some time, you’ll see how good it is.

Me and my husband love salads very much, they’re so versatile and you can mix and match with so many things, you can never get tired of making a salad. Who says salads are boring, he/she never ate the right salad.

We don’t eat salads to lose weight, but because we like salads.

This winter we ate more like warm soups and meals that were heavier if you can say that.

For example, we like very much lentil soup, I make it very often, is easy to make and soo tasty, recipe here, and so many cream soups. You know we like cream soups very much, that’s why I made a lot of them with so many variations, I made pumpkin cream soupfennellentilbroccoli and zucchini or a delicious pea cream soup.

These are some of the soups I made for the winter to warm us, but here comes the Spring and we change the menu a little bit.

We want to eat more salads because they’re healthy and of course, tasty. We are not that kind of persons that eat something only because is healthy and we don’t enjoy it.

I think that variety is the key, we are calm about our food, we don’t obsess over it, we don’t make excesses, we enjoy a cup of coffee, a tea together, a good meal, but, what is more important for us, is that we spend quality time together. That’s what will be left behind, our time together as a family.

This salad I invented it today, I improvised and made a tasty salad for us, so these ingredients are optional, make your own salad with what do you really prefer, change the ingredients that you don’t like. 🙂

Ingredients:

  • greens of your choice
  • I added a handful of roasted chickpeas, recipe here
  • 1/4 a bell pepper cut into cubes
  • feta cheese crumbled
  • mozzarella cheese, I had some mini cheese
  • cherry tomatoes
  • olives
  • cooked tortellini, I had some ricotta and spinach
  • some seeds, I had a mix of sunflower seeds, pumpkin and pine nuts

The dressing is like this one because we like it very much. I made before a dressing with vinegar, olive oil, mustard and so on and we didn’t like it very much because it was too acid for us, but this one works very well.

I think you should improvise in the kitchen and see what you made, you can invent new recipes every day.

Ingredients
  1. greens of your choice

  1. Mix everything together, add dressing on top and serve. 🙂
