I tried for the first time this delicious spread on my mother in law’s house and I was so amazed. I think I ate 3-4 slices of bread, I couldn’t get enough of this. It was so creamy and tasty, like nothing I have tasted before. After that day, I would ask my mother in law to make again that spread, because I loved it so much.

Actually, it’s extremely easy to make. Now I make it often at my house because my husband and I love this spread a lot.

Ingredients:

  • 1 head of cauliflower
  • homemade mayonnaise (I made a vegan mayonnaise, find it here: How To: 5-minute Vegan Mayonnaise)
  • salt and pepper
  • 1 small onion, chopped or grated

Cut the cauliflower into florets and wash it really good. Add it into a pot, add 1/2 a teaspoon of salt and cover with water. Cook until the cauliflower is tender. You can also steam the cauliflower, instead of cooking it in water.Cauliflower SpreadPut the cauliflower florets in a sifter, mash them with a fork and let them stay for 1 hour, to get rid of the excess water.Cauliflower SpreadThis step is very important. because this way, the spread will become fluffy, not runny.
