Green Beans Soup

I like all vegetables, I don’t think I have one that I don’t like, for me, all taste great. I mean, I like the vegetables I ate, there are many I haven’t tried so I can’t pronounce myself :).

Green beans are included, especially steamed, they’re so good steamed with some feta cheese on top mmm.. 🙂

I saved a handful of green beans to eat this week with feta cheese, you have to try that, it is so good.

Ingredients:

  • green beans trimmed and washed
  • one onion
  • 2 carrots
  • one parsnip
  • salt and pepper
  • olive oil
  • 3-4 tablespoons of tomato sauce (I used Pisto, is a vegetable mix)
  • parsley and celery leaves
  • a teaspoon of paprika

Start by preparing the veggies. Trim and wash the green beans. Chop the onion and slice the carrot and parsnip.

Heat the olive oil in a pot and add the onion, carrots and parsnip and sweat for 5 minutes.

Season with salt and pepper.

Take the pot off the heat and add the paprika and the green bean and stir. Add water and bring to a boil.

Let it simmer for 10 minutes and then add the tomato sauce.

Cook the soup until the green beans are soft and cooked through and then, to finish, add the leaves and let the lid on for 5 minutes to infuse the flavours.

Serve with yogurt or sour cream if you want.
