Green Beans Soup

Green Beans Soup is a cheap but nutritious and tasty soup. You should really give it a try if you haven’t already.

Ingredients:

  • green beans, trimmed and washed
  • one onion
  • 2 carrots
  • one parsnip
  • salt and pepper
  • olive oil
  • 3-4 tablespoons of tomato concentrate
  • parsley and celery leaves
  • a teaspoon of paprika
  • 2L of vegetable stock

Start by preparing the vegetables. Trim and wash the green beans. Chop the onion and slice the carrot and parsnip.

Heat the olive oil in a pot and add the onion, carrots, and parsnip and saute for 5 minutes.

Season with salt and pepper. Take the pot off the heat, add the paprika and the green beans and stir. Add the stock and bring to a boil.
