Couscous with Baked Asparagus

This is an improvisation of mine because I had in the fridge some couscous and we wanted to eat it with something so I came up with this recipe.

I like cleaning the fridge and eating what’s in there for 2-3 days and not having to throw it out because it got bad. I can say that we don’t throw food, we organize and try to eat the leftovers before I will make a new meal. This way we don’t waste food and IMPORTANTLY we save money. Maybe you can’t see how much money you saved, but for sure you can see how much money you’ve thrown away when you wasted food.

I came up with menus in our house, we have lists on our fridge door and we write on it every time we notice that something’s missing and we want to buy it again.

These tricks work for us very good.

So, to get back to the recipe, this is very simple to make, I just heated up the leftover couscous and I baked the asparagus, broccoli, and chicken breast.

Ingredients:

  • one chicken breast
  • couscous or other leftovers (rice of any kind)
  • 350 g of asparagus
  • one head of broccoli
  • salt and pepper
  • olive oil
  • parmesan cheese
  • herbs de Provence (I have homemade)
  • chili flakes

Prepare two baking trays with parchment paper. I have one big tray but it wasn’t enough so I put the rest in another one.

Wash the broccoli and the asparagus, cut the broccoli into small florets and break the ends of the asparagus, let them sit in a colander to get rid of the water.

Place all the greens onto the trays in a single layer. Sprinkle with salt, pepper, parmesan cheese and olive oil. Toss them to be fully covered, I made this recipe like this one.

Cut the chicken breast in half length-wise and make deep cuts. Season with salt and pepper, chili flakes and herbs de Provence. I did not buy the mix, I made it myself, it’s very easy, you just stir in some condiments.

(The smaller chicken breast is mine, you can see that I sprinkled the herbs only on mine, my husband doesn’t like those little rosemary stalks, so his is only seasoned with salt, pepper and chili flakes).

Put the chicken breasts onto the tray and put both trays into the preheated oven at 200*C for 20 minutes, or until the chicken is cooked through.
