Alcachofa y Patatas Guisadas (Artichoke and Potatoes)

This a Spanish delicious recipe, I provoke you to try it :), I am sure you will love it.

Ingredients:

  • 100 g of hearts of artichoke (I had frozen)
  • 4 potatoes, cut into small cubes
  • one onion
  • one carrot
  • 2 cloves of garlic
  • salt, pepper, oregano
  • stock or water
  • olive oil

Prepare your ingredients. Chop the onion and garlic, cut the potatoes, slice the carrot.

Sweat the onion and carrot for 5 minutes in olive oil. Add the garlic and sweat for 2 more minutes.

Season with salt, pepper, and oregano.

Add the potatoes and  artichoke and stir them a little bit and then add the stock or water and cover the vegetables.

Let them cook at medium heat for 20 minutes, until the artichokes and potatoes are cooked through.
