Pasta with Asparagus

I love pasta. 🙂

I love making pasta in every way. It’s so delicious and easy to make. I also like very much to buy all kinds of pasta. 🙂

And I love to improvise and try new pasta recipes.

This one is a delicious asparagus pasta.

I had frozen asparagus but you can use fresh, I’m sure it will be really good.

Ingredients:

  • I used 200 g of tagliatelle
  • 200 g of asparagus cut into small pieces
  • 10 cherry tomatoes, cut in 4
  • one onion, chopped
  • 2 cloves of garlic, chopped
  • salt, pepper, oregano
  • olive oil
  • pasta water, 1/4 a cup
  • parmesan cheese

Prepare all the ingredients.

Fill a big pot with water and add salt. Bring the water to a boil and add the pasta. Cook the pasta according to the package instructions. In the last minute, add the asparagus.

In a big pan heat one tablespoon of olive oil and sweat the onion for 5 minutes, add the garlic, sweat for 2 more minutes and then add the tomatoes, pasta water and let everything cook for 5-6 minutes.

Season with salt, pepper, and oregano.

Drain the pasta and asparagus and transfer them into the pan, stir everything together and serve with parmesan cheese and pepper.
