Tabbouleh is just a fancy word for Salad.
Traditionally is made with tomatoes, mint, parsley, bulgur, and onion.
I don’t have bulgur but I will surely buy, because I want to taste it and make recipes with it. 🙂
I chose to make this simple dish with quinoa, I think is just as good.
- 150 g of quinoa
- 1/2 a bell pepper
- 10 cherry tomatoes
- extra virgin olive oil
- salt and pepper
- lemon juice
- 1 grated carrot
Start by washing the quinoa and boil it in 300 ml of water.
If you want, you can season the quinoa at this step with salt, pepper, and dried oregano.
Boil it on medium heat until all the water has been evaporated.
Let it cool down completely.
Wash the bell pepper and tomatoes. Chop the pepper and cut the tomatoes in half.
Mix the quinoa with parsley leaves, pepper, tomatoes, carrot, and chives.
Sprinkle with a little bit of virgin olive oil and lemon juice.
