I love making fast and delicious food at home and this Red Lentil Soup with Vegetables is one of the recipes I love. It’s perfect for fall, it’s quick, delicious and definitely a comfort food.

Ingredients:

  • 250 g of rinsed red lentils
  • 5-6 broccoli florets
  • 1  big potato
  • 1 onion
  • 2 carrots
  • 1 stalk of celery
  • 1/2 a bell pepper
  • cumin, salt, and pepper
  • 3 L of vegetable stock

Red lentil cooks very easily, so be sure to add it 5 minutes before you turn off the heat. Every kind of lentil is good for you, it has a lot of benefits like:

  3. Add the potatoes cut into small pieces and 3 L of vegetable stock. If you don't have so much stock, you can add some water too. The red lentil cooks very quick so add it in the last 5 minutes.
  4. Add the lentils and cook until they're cooked through. Serve warm with some spicy pickles.

Notes

You can totally use another type of lentil, what you have on hand, but be careful with the cooking time. Red lentil cooks very easily, so be sure to add it 5 minutes before you turn off the heat.
