Quinoa and Kale Salad

We love to eat salads in the summer time, they’re quick and easy to make, so delicious, and especially, HEALTHY :).

Of course, salads are not only for summer, you can eat them the whole year round, you can eat cold and warm salads, they’re delicious either way.

This salad is quick to make and filling, you will love it.

Ingredients:

  • 100 g quinoa
  • 1 carrot
  • 10 almonds
  • 20 g of feta cheese
  • 30 g of green beans
  • 30 g of peas
  • 1 small stalk of kale
  • chives
  • fresh parsley

Dressing:

  • 2 tablespoons of virgin olive oil
  • 3 tablespoons of balsamic vinegar
  • 1/2 a teaspoon of honey
  • salt and pepper
  • chili flakes
  • garlic powder

Pour the quinoa into a strainer and wash it really well with cold water. Add it to a pot with a double amount of water and a pinch of salt and bring to a boil. Then, reduce the heat to medium and simmer for 15 minutes with the lid on.

In another pot add the trimmed green beans and cook them for 5 minutes, and the peas for 2 minutes and then wash with cold water and set aside.

Prepare a big platter and add the quinoa, the torn apart kale and the rest of the ingredients. Prepare the dressing and serve this delicious salad. ๐Ÿ™‚
