If you need a tasty but easy weeknight meal idea, this Pea Stew with Bacon and Potatoes is for you. It’s super easy to make but 100% delicious.
- 500 g of frozen peas
- 3 medium carrots
- 2 shallots
- 2-3 small potatoes, cubed
- 1/2 a bell pepper
- salt and pepper to taste
- 3-4 tablespoons of fresh dill
- 1 tablespoon of fresh parsley
- 150 g of bacon cut into cubes
- 500 ml of warm stock or water
- 1 tablespoon of cornstarch
The first thing we have to do is to prepare our ingredients. If we have every ingredient on hand, we can finish this dish in less than 30 minutes.
In a pot fry the cubed bacon until it’s almost crispy, for 5 minutes approx. No need for oil because the bacon has enough fat.
When the bacon is fried, add the shallots, carrots, and bell pepper cut into little cubes as well. Saute everything together for 5 more minutes.
Add the cubed potatoes. Warm the stock or water, add the cornstarch in, stir and pour it over the stew.
Season with salt and pepper and bring the stew to a boil. When it starts boiling, turn the heat to medium-low and let it simmer for 10 minutes.
After 10 minutes, add the peas and more fresh dill if you want and cook for 10 more minutes on low heat.
When the veggies are cooked through and soft, turn the heat off, let the stew rest for 5 minutes and then serve. This stew is great on its own because of all the veggies, the potatoes, and the bacon. It’s quick to make and filling.
And it’s great because we use frozen peas. Frozen veggies are great especially when there are not so many fresh veggies to pick from. If we want to eat more veggies, frozen ones are a great choice.
