Lentil Soup with Chorizo Sausage

The first time I ate Lentil Soup with Chorizo Sausage was at my parents in law. Before that, I had no idea what lentil was. Since then, it’s my favorite soup and we eat it very often.

Ingredients:

  • 200 g lentil (soaked 1/2 hour)
  • 50 g chorizo sausage
  • 2 small potatoes
  • 1 chopped onion
  • 1 clove of garlic
  • one big carrot
  • 1/2 bell pepper
  • salt and freshly ground pepper
  • 2 bay leaves
  • 100 ml of tomato sauce
  • 1 teaspoon of paprika

You have to wash the lentil very well to get rid of all the dirt. Pour the lentil into a strainer and wash it in cold water and then let it soak for 30 minutes.


In the meantime, slice the chorizo and cut the vegetables into small pieces.

In a big pot, add the chorizo and fry it for 2 minutes, without any oil, because the sausage releases its own fat and it’s enough. Add the vegetables and saute everything for 10 minutes.

Season with salt and pepper. Add the tomato sauce, bay leaves, potatoes, and paprika. Take the pot off the heat and stir for a few seconds. We take the pot off the heat because the paprika burns very easily. Or let the pot on the stove but be extra careful.

Add the lentils along with 2,5-3 L of water. Bring the soup to a boil and when it starts boiling, let it simmer on medium heat until the vegetables and the lentils are cooked through approximately 30 minutes.

Serve warm along with pickles.
