
Spanish Garlic Soup
This Spanish Garlic Soup is one of my favorites. You don’t get that raw taste of garlic, it becomes somehow sweet and very tasty. You will see that is also very simple to do this.
Ingredients:
- 2 loaves of bread, cut into cubes
- 50 g of bacon, cut into cubes
- 5-6 cloves of garlic, sliced
- 1/2 a teaspoon of paprika
- olive oil
- salt and pepper
- 2 L of stock
- 2 eggs, beaten
Prepare everything. Cut the bread and bacon, slice the garlic.


In a soup pot heat the olive oil and fry the garlic and the bacon, but be careful, stir constantly so that the garlic would not burn. You want a slightly golden color on the garlic.

Add the bread and stir a little.

Take the pot off the heat and add the paprika and stir. Season with salt and pepper. Add the stock. Bring to a boil and then let it simmer for 20 minutes approx.
When the soup is cooked, let it cool for 5 minutes and then add the beaten eggs to the soup and mix very well the soup with a fork. Add more bread on top and serve hot.
