This Cauliflower Spread it’s like nothing you’ve ever tasted before. It’s super creamy, delicious and easy to make. Give it a try.
- 1 head of cauliflower
- 100 ml of mayonnaise (here is my vegan mayonnaise recipe)
- salt and pepper
- 1/2 an onion, chopped or grated
Cut the cauliflower into florets and wash it really good. Add it to a pot, add 1/2 a teaspoon of salt and cover with water. Cook until the cauliflower is tender.
You can also steam the cauliflower, instead of cooking it in water.
Put the cauliflower florets into a sifter, mash them with a fork and let them stay for 1 hour, to get rid of the excess water.
!This step is very important. because this way, the spread will become fluffy, not runny.
After 1 hour, move the spread into a bowl, add the grated onion, season it with salt and pepper and add the mayonnaise. Stir everything and serve with toast or breadsticks.
