
Green Beans Soup
Green Beans Soup is a cheap but nutritious and tasty soup. You should really give it a try if you haven’t already.
Ingredients:
- green beans, trimmed and washed
- one onion
- 2 carrots
- one parsnip
- salt and pepper
- olive oil
- 3-4 tablespoons of tomato concentrate
- parsley and celery leaves
- a teaspoon of paprika
- 2L of vegetable stock
Start by preparing the vegetables. Trim and wash the green beans. Chop the onion and slice the carrot and parsnip.

Heat the olive oil in a pot and add the onion, carrots, and parsnip and saute for 5 minutes.

Season with salt and pepper. Take the pot off the heat, add the paprika and the green beans and stir. Add the stock and bring to a boil.

Let it simmer for 10 minutes and then add the tomato concentrate.


Cook the soup until the green beans are soft and cooked through, for 20-25 minutes. To finish, add the leaves and let the lid on for 5 minutes to infuse the flavors.
Serve with yogurt or sour cream if you want.
