Mediterranean Couscous Salad

Mediterranean Couscous Salad

You have to try this quick Mediterranean Couscous Salad, it’s so good and easy to make.

Ingredients:

  • 300 g of couscous
  • 1/2 a bell pepper, cut into small cubes
  • 100 g of cooked chickpeas
  • salt and pepper to taste
  • 1 teaspoon of grapeseed oil
  • 1 tablespoon of chopped fresh parsley
  • 50 g of feta cheese
  • 10 mini mozzarella balls, halved
  • 250 g of cherry tomatoes

In a bowl add the couscous, salt, pepper, parsley and the oil. Boil 300 ml of water and pour it over the couscous. Cover the bowl with a lid and set apart for 10 minutes.

In a bigger bowl, add the rest of the ingredients and stir to combine. Add the couscous and stir. Taste to see if it needs any more seasonings, if not, serve at room temperature.
