This Alcachofa y Patatas Guisadas is a Spanish delicious recipe, I encourage you to try it :). I am sure you will love it.
- 100 g of hearts of artichoke (I used frozen)
- 4 potatoes, cut into small cubes
- one onion
- one carrot
- 2 cloves of garlic
- salt, pepper, oregano
- stock or water
- olive oil
Prepare your ingredients. Chop the onion and garlic, cut the potatoes, slice the carrot. Sweat the onion and carrot for 5 minutes in olive oil. Add the garlic and sweat for 2 more minutes.
Season with salt, pepper, and oregano. Add the potatoes and artichokes and stir them a little bit and then add the stock or water and cover the vegetables.
Let them cook at medium heat for 20 minutes, until the artichokes and potatoes are cooked through. Season again if it’s necessary and serve. 🙂
