Ravioli with Mushroom and Ricotta

I love pasta. I like eating it in all kinds of recipes and I like to improvise. And I like tortellini and ravioli very much, it’s one of my favorite things to eat. Today I made this really quick recipe, Ravioli with Mushroom and Ricotta and I really loved it.

If you cook the ravioli and make the sauce at the same time, you have your dish on the table in less than 30 minutes.


  • 250 g of Ravioli
  • one onion
  • one clove of garlic
  • 3 handful of spinach
  • 3 tablespoons of ricotta cheese
  • salt, pepper, and oregano
  • olive oil
  • 1 teaspoon of butter
  • 1 cup of stock
  • 1/2 a cup of pasta water
  • 50 g of mushroom

In a big pot, boil some water with a 1/2 a teaspoon of salt. Add the ravioli to the boiling water and cook them until they’re soft. Careful not to overcook them.

In a pan add the olive oil and butter and stir to melt. Add the onion and sweat for 5 minutes. Add the garlic.

After 2 minutes add the stock or wine, if you want. Let them simmer for 5 minutes and then, add the mushroom and cook them on medium heat. Season with salt and pepper. Add 3 tablespoons of ricotta cheese and stir to combine.

Add 1/2 a cup of pasta water, the spinach, season with dried oregano and stir. And that’s it. Very easy to make and ooh, so delicious. 🙂
