
Quinoa Tabbouleh
Quinoa Tabbouleh is a delicious variation to the original recipe. However you make it, it’s tasty and super easy to make.
Traditionally is made with tomatoes, mint, parsley, bulgur, and onion.
Ingredients:
- 150 g of quino
- 1/2 a bell pepper
- 10 cherry tomatoes
- parsley
- extra virgin olive oil
- salt and pepper
- oregano
- lemon juice
- chives
- 1 grated carrot
Start by washing the quinoa and cook it in 300 ml of water, on medium heat with the lid on for 15 minutes.
If you want, you can season the quinoa at this step with salt, pepper, and dried oregano.
Let it cool down completely and set aside.
Wash the bell pepper and tomatoes. Chop the pepper and cut the tomatoes in half.
Mix the quinoa with parsley leaves, pepper, tomatoes, carrot, and chives.
Sprinkle with a little bit of virgin olive oil and lemon juice. Serve at room temperature.

I make tabbouleh salad all the time using bulgur wheat, but never thought to sub in quinoa. What a great idea — it adds so much protein!

I used it because I didn’t have bulgur on hand, but it’s really nice with quinoa as well, or spelt, I guess.

I’m half Jordanian and I love Middle Eastern food! I make tabouleh but with more parsley as it’s the main ingredient in tabouleh in the Middle East. Very refreshing salad!
