
Simple Cabbage Soup
This Simple Cabbage Soup is a healthy one, with cheap ingredients, but nutritious and delicious. You should definitely give it a try.
I made this simple cabbage soup because we (me and my husband) want to eat as many vegetables as we can. We buy different kinds of vegetables (and of course, fruits) and I cook them.
Every vegetable has different vitamins in them and minerals and we want to enjoy them.
This is a very simple recipe. I know that the cabbage soup is known for weight loss. I don’t eat it because I want to lose weight, I eat because I want to eat cabbage, just like we eat other vegetables.
Ingredients:
- 1/2 a cabbage
- 2 carrots
- 1 onion
- 30 g of green beans
- 1 stalk of celery
- 100 g of crushed canned tomatoes
- 2 L of stock or water
- 1 tablespoon of tomato paste
- oregano, salt, and pepper
- olive oil
Start by slicing or grating the cabbage. In a big pot, add one tablespoon of olive oil and sauté the onion, carrots, green beans and celery for 5-6 minutes.

Add the canned tomatoes and the paste and stir to combine.

Season with salt, pepper, and oregano and add the cabbage.

Add water or stock to cover the cabbage (I added 1.7-2 L) and bring to a boil. Simmer the soup until is fully cooked and serve.
This soup is simple, very easy to make and really delicious. You might think that it’s not so delicious because it’s a simple soup, but it really is. Try it and you will see for yourself.
