
Red Lentil Soup with Vegetables
I love making fast and delicious food at home and this Red Lentil Soup with Vegetables is one of the recipes I love. It’s perfect for fall, it’s quick, delicious, and definitely a portion of comfort food.
Ingredients:
- 250 g of rinsed red lentils
- 5-6 broccoli florets
- 1 big potato
- 1 onion
- 2 carrots
- 1 stalk of celery
- 1/2 a bell pepper
- cumin, salt, and pepper
- 3 L of vegetable stock
Start by preparing all the ingredients. Chop the vegetables and wash the lentils.
Look how pretty the vegetables look. So colorful and so healthy each and every one of them. I love veggies so much. They’re my favorite thing to eat every day.

You can totally use another type of lentil, what you have on hand, but be careful with the cooking time. Red lentil cooks very easily, so be sure to add it 5 minutes before you turn off the heat. Every kind of lentil is good for you, it has a lot of benefits like:
- rich in dietary fiber
- they’re filled with magnesium
- stabilizes blood sugar
- has iron, for energy
If you want to stay healthy, eat your veggies. 馃檪

In a pot pour 1 tablespoon of olive oil and saute the vegetables for 10 minutes (except the potatoes). Season with cumin, salt, and pepper. Already smells amazing. 馃檪

Add the potatoes cut into small pieces and 3 L of vegetable stock. If you don’t have so much stock, you can add some water too. The red lentil cooks very quickly, so add it in the last 5 minutes.

Add the lentils and cook until they’re cooked through. Serve warm with some spicy pickles. 馃檪
