Pancakes with Sour Cherries
These tasty Pancakes with Sour Cherries are extremely easy to make. They have the perfect amount of sugar and a sour taste of the cherries. YUM!
We love pancakes very much, we love them most with some fruits and a cup of coffee or tea.
Sounds good, right? 🙂
Pancakes are so versatile, you can make them sweet, savory, you can top them with fruit sauces or chocolate, caramel, whipped cream etc. There’s a multitude of recipes you can make.
This one is simple and so easy to whip up. You don’t need a food processor, you can easily make this with a wooden spoon.
In 5 minute you have your prepared batter. 🙂
Ingredients:
- 200 g of spelt flour
- 230 ml of milk
- 1 tablespoon of poppy seeds
- 2 tablespoons of sugar
- 1 tablespoon of vanilla extract
- 1/4 of a teaspoon of salt
- 1/4 of a teaspoon of baking soda
- 2 eggs
- one mashed banana
- 1 handful of sour cherries
- 1 tablespoon of lemon juice
Every ingredient has to be at room temperature.
Measure the milk and add the lemon juice. Let this mixture sit for 10 minutes and then, add the eggs and stir well with a fork. Add the banana and stir everything together.
In a big bowl add the flour, salt, baking soda, sugar, poppy seeds, and stir. Add the egg mixture, the cherries, and the vanilla extract and stir with a spatula very good so that you’ll have a smooth mixture, without lumps.
Heat a pan with some oil on high heat and before you add your pancakes, reduce the heat to medium. Add batter for one pancake and then let it cook on both sides 2-3 minutes.
Serve with what you prefer, I like my pancakes with fresh fruits and some agave on top.

I’ve never tried experimenting with spelt flour. These pancakes looks so light and fluffy. Just my kind of recipe to kick off the weekend:)

I cook very often with spelt flour, or sometimes, I eat spelt instead of rice, just to mix things up.
