
Potato Salad
Potato Salad is an excellent meal idea for lunch, on the go or for picnics with the family. It’s super delicious and easy to make.
When it’s hot outside, I’m sure that you too, don’t want to spend a lot of time in the kitchen, and want something easy to eat.
You can serve this dish at room temperature, or if you prefer, you can eat it straight from the fridge. I wanted to make it with some green vegetables, so I added broccoli and peas.
These add some freshness to the salad.
Ingredients:
- 700 g of baby potatoes
- 1/2 a head of broccoli
- 50 g of peas
- parsley
- chives
- slices of red onion
- 3 radishes, sliced
- homemade mayonnaise (recipe here)
Start by cutting the potatoes in four. Boil them for 3 minutes in salted water, add the broccoli florets and boil them together 3 more minutes and in the last 2 minutes add the peas.
Don’t overcook the vegetables. Drain all the water and move the veggies into a big bowl. Add the sliced onion and radishes. Sprinkle fresh parsley and chives.
Make the mayonnaise and sprinkle on top and stir everything. You can serve the salad cold or at room temperature.

I’ve never put peas or radishes or broccoli in a potato salad before! Sounds so much healthier than a classic potato salad!

I don’t know exactly how the classic potato salad is, I made it for my taste, I put a little bit of mayonnaise and I tried to compensate that with some peas and broccoli.
