
Quinoa Salad with Red Cabbage
The best thing about summer (when we talk about food) is that we eat a lot of different salads and this Quinoa Salad with Red Cabbage is perfect for summer days.
Salads are filling, enough for lunch or dinner. Some people think that salads are not for them because they’re not hearty, they’re not like meat.
We like salads very much and we eat them quite often. You can make them with greens or not, just a mix of vegetables and a dressing.
Today’s salad is without greens, just vegetables, and quinoa. If you haven’t tried quinoa before, I really recommend you to do it, it’s delicious and so healthy and good for you.

This salad is very easy to make and so delicious.
Ingredients:
- carrot
- 100 g of cooked quinoa
- red cabbage
- feta cheese
- cherry tomatoes
- cucumber
- radishes
Start by preparing all your ingredients. Wash and cook the quinoa in 200 ml of water.
Cut the carrots julienne, slice the radishes, cut the tomatoes in 2, slice the cabbage, cut the cucumber into little cubes.
Add all the ingredients into a big bowl. Add the cooked quinoa and the cheese and stir the salad.
Prepare the dressing.
Dressing:
- 2 tablespoons of extra virgin olive oil
- the juice from 1/2 a lemon
- salt
- pepper
- garlic powder
- chili flakes
Add all the ingredients in a small bowl and stir. Pour the dressing on top of the salad only when you are ready to serve it.
