
Chia-Seed Pancakes
Pancakes are very easy to make, you don’t need to buy a pancake mix, that’s just silly, make your own, because it doesn’t get much easier than this. And these Chia-Seed Pancakes are perfect for breakfast.
I told you before in my last posts that I love breakfast very much, in fact, I love that part of the day when it’s all quiet and I can enjoy my breakfast and if I have pancakes for breakfast, then it’s a good day. 🙂
I like pancakes very much, but I make them quite rarely so that I will not get tired of them, and every time I eat pancakes, it’s a good breakfast.
Ingredients:
- 300 ml of almond milk
- 300 g of spelt flour
- 1 tablespoon of chia seeds
- 1 teaspoon of poppy seeds
- 1/4 a teaspoon of baking soda
- 1/4 a teaspoon of salt
- 2 tablespoons of brown sugar
- 1 egg
- the juice from 1/2 a lemon
Every ingredient has to be at room temperature in order to get fluffy and delicious pancakes.
In a big bowl add the flour, sugar, baking soda, poppy and chia seeds and salt. In a smaller bowl, add the milk and the lemon juice and let the mixture sit for 10 minutes. After 10 minutes add the egg and stir.
Add the egg mixture to the flour and whisk until everything is well incorporated. Prepare a big pan on high heat with a drop of sunflower oil.
Add 2 or 3 pancakes to the pan and reduce the heat to medium. After 2 minutes on one side, turn them over and cook them for 1 more minute.


Plate 2-3 pancakes on a serving plate and serve with some fruits and agave on top. They’re delicious, especially with a cup of tea or coffee. 🙂

Do you think this would work with some non-grain flours? Any coconut flour ideas?

I’ve never used coconut flour, but I’m sure it would work just as good with any kind of flour.
