This Quinoa and Kale Salad is quick to make and filling. It’s the perfect lunch idea, at home or on the go.
- 100 g quinoa
- 1 carrot
- 10 almonds
- 20 g of feta cheese
- 30 g of green beans
- 30 g of peas
- 1 small stalk of kale
- fresh parsley
- 2 tablespoons of virgin olive oil
- 3 tablespoons of balsamic vinegar
- 1/2 a teaspoon of honey
- salt and pepper
- chili flakes
- garlic powder
Pour the quinoa into a strainer and wash it really well with cold water. Add it to a pot with a double amount of water and a pinch of salt and bring to a boil. Then, reduce the heat to medium and simmer for 15 minutes with the lid on.
In another pot add the trimmed green beans and cook them for 5 minutes, and the peas for 2 minutes and then wash with cold water and set aside.
Prepare a big platter and add the quinoa, the torn apart kale and the rest of the ingredients. Prepare the dressing and serve this delicious salad. 🙂
