
Quick Pickled Red Onions
I like things that you can make very easily and also, ahead of time. Especially in the summer, I like fresh ingredients and meals that are refreshing and easy to make. This Quick Pickled Red Onions recipe is one of them.
I like to make a lot of delicious salads and bowls with fresh veggies and hummus, or rice and quinoa, meals that make us feel good.
These pickled onions are refreshing, you can eat them in so many ways, they’re delicious either way. I love them so much, that I like to eat them plain, with a fork. 🙂
The best thing about these onions is that they’re so easy to make, in 5 minutes you made a jar and in 1 hour, you can savor these with a meal or in a wrap.
Ingredients for 2 jars (300 ml/every jar):
- 2 small red onions
- 2 tablespoons of sugar
- 1 tablespoon of salt
- 150 ml of water
- 70 ml of vinegar
Thinly slice the onions and add them to the jars. Whisk together the water with vinegar, salt and sugar until fully dissolved.
Add the vinegar mixture to the onion to fully cover, put the lid on, shake the jar a little bit to combine perfectly and refrigerate the jars.
You can eat this after 1 hour, but it’s best if you leave it overnight.
