
Roasted Sweet Potatoes with Herbs de Provence

If you’re anything like me, you like fries, A LOT :), and I’m happy to meet you, but fries, and potatoes in particular bloat us very much so we have to find ways to eat our favorite foods without feeling like a pregnant lady all the time.
Rarely I make a batch of fries, and most of the times, I bake potatoes or sweet potatoes. Sweet potatoes bloat me as well, but less. I have this problem with bloating because I have an ulcer in my stomach, so I have to be careful what I eat because I’ll feel sick later.
Sweet potatoes are really good and healthier than normal potatoes, but I still eat normal potatoes, because they’re really good too.
If you have a problem with bloating, you should avoid or eat rarely and in small quantities these fruits and vegetables:
- bean
- chickpeas
- broccoli
- cabbage and brussels sprouts
- peas
- lentil
- cauliflower
- kale
- onion
- bell pepper
- radish
- kohlrabi
- leeks
- eggplant
- potatoes
- pears
- plums
- dates
- corn
These are some of the foods that help you with bloating:
- watermelon
- ginger
- cinnamon
- green juices
- pineapple
- flax seeds
- mint
- lemon
- cucumber
- yogurt
It doesn’t mean that I don’t eat those foods, but I try to eat them rarely and in small portions because I like them all.
Now for the recipe. If you like sweet potatoes, you will love this simple recipe.
Ingredients:
- 1 sweet potato
- 1 tablespoon of oil of your choice (I used grapeseed oil)
- salt and pepper
- Provence herbs as much as you like

It’s so very easy to make these roasted sweet potatoes. Peel, wash and slice them. Arrange every slice into a big tray in a single layer, drizzle oil and season with salt, pepper, and the herbs. Bake the potatoes at 200*C for 25 minutes, or until golden and delicious. 🙂
