Endive, Cherry Tomatoes and Feta Cheese Salad

You will love this Endive, Tomatoes and Feta Cheese Salad, it’s filled with a lot of tasty ingredients, you can eat it at lunch or dinner. It’s hearty, delicious and super easy to make and it’s ready in less than 20 minutes.

The only thing that needs to be cooked is the chicken breast, the rest of the ingredients are raw.

Ingredients:
  • 1 endive, cut into thin slices
  • 1 handful of mixed greens
  • 7-8 cherry tomatoes, halved
  • 1/2 a stalk of celery, sliced
  • 1 slice of chicken breast, grilled
  • 4-5 cubes of marinated feta cheese
  • 1 tablespoon of fresh parsley, chopped
  • hemp seeds, for topping

Dressing:

  • 1/2 a teaspoon of agave syrup
  • 1 tablespoon of extra virgin olive oil
  • 1/2 tablespoon of balsamic vinegar
  • salt and pepper to taste

First of all, put the grill pan to heat up. Season the chicken breast on both sides and cook it on the grill on both sides, on medium heat, for about 6 minutes, until it’s fully cooked.

In the meantime, prepare the salad. Cut the tomatoes in half, cube the feta cheese, slice the celery stalk and cut the endive into thin slices. Add every ingredient on the plate, add the cooked chicken breast, fresh parsley, and top the salad with the hemp seeds.

Next, prepare the dressing. Add every ingredient into a small jar and whisk to emulsify.

When you are ready to eat it, add the dressing, stir to combine and serve immediately.

If you are making this salad for work, do not add the dressing to the salad, store it separately in a small jar, and add it just before eating the salad.
