
White Bean Stew with Kale and Sausages
You guys, this is the most comforting stew I’ve eaten in a long time. It was so good, so hearty, and so delicious. It takes just a few minutes to make and it will totally warm you up.
Ingredients:
- 600 g of cooked white beans
- 3 stalks of kale
- 3 carrots
- 1 onion
- 2 cloves of garlic
- 2 bay leaves
- salt and pepper to taste
- 50 g of sausage of your choice
- 1 L of vegetable stock (find a cheap version here)
- 1 stalk of celery or 30 g of celery root
- celery leaves
In a large pot add the sausage, garlic, onion, celery, and carrots and saute for 10 minutes. Season with salt and pepper and add the bay leaves.

Drain and wash the cooked beans and add them to the pot, with the stock and the celery leaves. Stir gently to combine, put the lid on and cook on medium-low heat for 20 minutes.

After 20 minutes, add the washed kale, that’s been torn into bite-size pieces. Let the stew cook for 5 more minutes.
You should have kale in your diet because it’s very healthy and good for you. I like to add kale, spinach or chard into stews because they’re filled with vitamins and minerals.
Kale has a lot of health benefits, like:
- it’s antioxidant
- anti-inflammatory benefits
- cancer-preventive benefits

Season again if it’s necessary and then you can serve it with pickles. It’s a hearty stew, easy to make and really delicious. I hope you’ll give it a try.
You can make this vegan/vegetarian by adding chickpeas, sweet potatoes, pumpkin or any other vegetable instead of sausage.
