
Ricotta, Ham and Bell Pepper Puff Pastry Pinwheels
I have always loved puff pastry. It’s so easy to work with, delicious and you have an extremely tasty appetizer in minutes, like these Ricotta, Ham and Bell Pepper Puff Pastry Pinwheels.
These are extremely easy to make, and you can totally make them ahead of time, and put the log in the freezer. You take the log out from the freezer, cut it into 3 cm pinwheels and bake it when you are ready to serve these. And the best part, this recipe requires only 4 ingredients.
Ingredients:
- one sheet of puff pastry
- 1 bell pepper, or 2 halves, I used half red and half yellow
- 1 heaping spoon of ricotta cheese
- 3 big slices of ham, cut into cubes
Take the puff pastry out of the freezer and let it thaw at room temperature for 20 minutes, until you can manage to work with it.
Chop the bell peppers, the ham and set aside. I used 2 kinds, half of a yellow and a red one, but you can use just one if you want.
Move the thawed puff pastry onto a baking sheet lined with parchment paper and spread the ricotta cheese all over it.

Mix the peppers with the ham and add this mixture to the pastry.

Roll it tightly and put it in the fridge for 1 hour to harden a little bit. This way, it will be easier to cut into pinwheels.

Take the log from the fridge and cut it into 3 cm pinwheels and arrange them on the baking sheet.

Bake them for 30 minutes or until golden in the preheated oven at 180*C.
They’re delicious hot and cold, the next day.

Looks delicious! I’m a simple ham and cheese type so I’d probably dumb down the recipe but mmm I’m sure it tastes lovely 🙂
