
Quick and Easy Chicken Noodle Soup
In my country, Chicken Noodle Soup is a traditional dish, a lot of people love it very much, so they make it almost every Sunday. And it’s not at all hard to make this.
I remember this soup since I was a little girl, my mom made it very often with lots of freshly picked parsley, straight from the garden. That parsley had such a strong flavor, so natural, not like anything we buy from the supermarket.
Normally, people from my country, who live in towns or small cities, have gardens filled with vegetables and they also have chickens, so the soup is made with chickens from their yard, not from the supermarket.
The ingredients for this easy soup are just a few, and you will have a delicious Chicken Noodle Soup ready for you.
Ingredients:
- 2 small organic chicken thighs
- 1 onion
- 1 garlic clove
- one stalk of celery
- 2 carrots
- 2 tablespoons of fresh parsley
- 1 tablespoon of dried vegetables
- 50 g of thin noodles
The only thing we have to do is to prepare all the ingredients and put them to cook. That takes only 5 minutes and then we wait for the magic to happen.

Clean and take the skin off the chicken thighs. Put them in the pot. Peel the onion and garlic, slice the celery and carrots and chop the parsley.
Add every ingredient to the pot, cover with 3 L of water and bring to a boil. When it starts to boil, turn the heat to low and let the soup simmer for 30 minutes approx. until the chicken is cooked through.
Now, take the chicken out and shred it. Next, add the shredded chicken back to the pot, add more parsley if you want and then, add the noodles.
Take the onion and garlic out of the pot and cook the noodles according to the package instructions into the soup.
Serve hot.
