Super Easy Zucchini Soup

If you make this super easy zucchini soup, I am sure you will make it again. It’s tasty and quick to make.

Ingredients:

  • 3 zucchini
  • 1 teaspoon of paprika
  • 1 tablespoon of flour
  • salt and pepper to taste
  • 2 L of stock or water
  • 2 tablespoons of fresh dill
  • 1 small onion
  • 1 clove of garlic
  • 1 tablespoon of greek yogurt or cream

As you can see, you need just a few ingredients for this recipe, maybe you even have all of them in your kitchen.


Start by peeling the zucchini, and grate them on a grater with big holes. Set aside.

Chop the onion and garlic and saute them for 10 minutes in 1 teaspoon of olive oil and 1 teaspoon of water. Add the paprika and stir for 10 seconds to combine and add the flour and stir as well.

After cooking just a few seconds the flour and paprika, pour in the stock or the water and bring the soup to a boil.

Season with salt and pepper and add all the grated zucchini. Simmer on low heat until the zucchinis are cooked and tender.

Now you can add the fresh dill and cook for 5 more minutes.

Lastly, add in the cream or Greek yogurt, or you can add it just when you plate the soup.
