
Healthy Banana Bread
You know I love my coffee. Maybe too much. 🙂 And you can’t drink a cup of coffee without having some treat to go with it. And for me, a sweet but healthy bread or a simple pound cake will do.
For this recipe, I made some tweaks to make it healthier than other banana bread recipes. I used coconut oil instead of butter, simple yogurt instead of a Greek one, whole-wheat flour and coconut sugar instead of regular.
Ingredients:
- 3 very ripe bananas
- 2 eggs, at room temperature
- 200 g of whole-wheat flour
- 2 tablespoons of natural unsweetened yogurt
- 1 tablespoon of coconut oil, melted
- 1/2 a teaspoon of baking soda
- a pinch of salt
- 3 tablespoons of coconut sugar
- 1 teaspoon of cinnamon
Preheat your oven to 190*C. In one big bowl add the bananas and mash them with a fork. Add the eggs, melted coconut oil, the yogurt, and mix with a hand mixer or a wooden spoon.

Add the dry ingredients and mix just until everything is fully combined. Don’t overmix, otherwise, your bread will become tough when baking.


Grease your bread pan with melted coconut oil and pour the batter in. Bake for 50 minutes, or until a toothpick comes out clean. Let cool completely before cutting it.
