Healthy Baked Broccoli Bites

These Healthy Baked Broccoli Bites are the perfect little appetizer or just a snack on the go, with some delicious sriracha. YUM!!

Ingredients:

  • 1 head of broccoli
  • 5 tablespoons of breadcrumbs
  • 2 eggs
  • salt and pepper to taste
  • 1/2 a teaspoon of dried oregano
  • 100 g of grated cheese of your choice
  • 1 tablespoon of hemp seeds

This appetizer is super simple to make. If you have a head of broccoli lying around in your fridge, you have to make this deliciousness.


Start by cutting your broccoli into florets, wash it and steam it for 5-6 minutes. Discard the water and put the broccoli florets into a big bowl.

With a potato masher, mash the broccoli into small pieces, until you reach the desired consistency.
I like mine more crumbly, that’s why I used the potato masher, but if you like it more like a paste, feel free to use a food processor.

After you mashed the broccoli, add the rest of the ingredients and stir to combine. I needed 5 tablespoons of breadcrumbs, but if you need more, add 1-2 more tablespoons.
With your clean hands, form balls, or patties if you want, and arrange them on a baking sheet lined with parchment paper.

Bake them for 30 minutes in the preheated oven at 180*C, until golden brown. Flip the bites halfway through.
Serve them hot with sriracha or other sauce that you like.
