15-minutes Pasta Carbonara

This 15-minutes Pasta Carbonara is my favorite weeknight meal to make because it’s super easy to make and so amazingly delicious.

Pasta Carbonara is really easy to make. If you have just a handful of ingredients, you got yourself a bowl full of deliciousness and in under 20 minutes. What’s not great about that?  🙂

Ingredients:

  • 200 g of spaghetti
  • 30 g of grated parmesan cheese
  • 2 eggs
  • 150 g of finely diced pancetta or bacon
  • pepper to taste
  • 2 cloves of garlic, chopped

If you follow these steps, in 15 minutes you will have Pasta Carbonara ready for you to dig in.

The secret is to work on the rest of the ingredients while the bacon and the spaghetti are cooking. This way, you will save a lot of time.

In a soup pot pour water and add 1/2 a teaspoon of salt. Bring to a boil. When it starts to boil, add the spaghetti and let them cook on medium heat without the lid until they’re al dente.

At the same time when you put the water to boil, you also add a big skillet to heat up. When it’s heated, add the pancetta without any oil. Fry it on medium-high heat until it’s almost brown. While the pancetta is cooking, chop the garlic cloves and add them to the skillet.

Cook the garlic and the pancetta until the garlic is fragrant.

While the garlic and the pancetta are cooking, quickly mix the eggs with the parmesan cheese and the pepper. Stir with a fork until they’re combined. Set aside.

By now the spaghetti and the pancetta are cooked.

Drain the spaghetti, reserving a 1/4 of a cup of cooking water and dump them into the skillet. Stir them to combine with the pancetta, garlic and the oil. Pour into the skillet the water as well.

After 1-2 minutes, pour the egg mixture as well into the skillet and stir vigorously to combine and to prevent them from scrambling.

Serve immediately with some extra parmesan on top and pepper.
