
Spiced Cardamom Ginger Cookies
If you are anything like me, you love your coffee! You love it so much that you want to pair it with something. And these Spiced Cardamom Ginger Cookies are perfect for coffee!
I love Christmas cookies, shortbreads, gingerbread, everything Christmas, but since I’m not such a fan of sweets, I love more to bake them instead of eating them. Is that weird? I love to bake stuff, but for the pleasure of baking, not the eating. And when I make some cookies, I like to make a small batch of them and to try different kinds of them with my coffee.
So, today I said I wanted to try some ginger cookies. It was so rainy outside and I was super lazy today because of the gross weather. I just cooked lunch and made these cookies. I wasn’t very productive. But sometimes it’s ok. It’s ok to be lazy sometimes and to give yourself a break.
To make these cookies you’ll need one bowl and 5 minutes.
Ingredients:
- 75 g of room temperature butter
- 50 g of brown sugar
- 1 egg, at room temperature
- 1/4 a teaspoon of vanilla powder
- 1 teaspoon of ground ginger
- 1/4 a teaspoon of allspice
- 1/2 a teaspoon of ground cardamom
- a pinch of salt
- 120 g of whole wheat flour
As you can see, the cookies don’t require many ingredients, and maybe you even have them in your pantry. So why not give these cookies a try? And make a coffee to go along with them. Because while the cookies are in the oven, the coffee is done. And you’re multitasking.
In a bowl, add the butter and sugar. Cream them with a mixer until the sugar is pretty much dissolved. Crack in one egg.

Beat the egg and add the rest of the ingredients. Fold the flour in with a rubber spatula until everything is well incorporated. Like this :).

Take heaping teaspoons of dough, form balls and add them to a baking sheet lined with parchment paper. Leave space between because they will expand. Bake the cookies in the preheated oven at 180*C for 10-15 minutes, or until they’re brown at the edges.
Leave them to cool completely. Don’t cook them more minutes because they will get harder when they’ll cool anyway.

I don’t think you liking baking sweets more than eating them is weird. I was the same until quite recently 🙂 I’ve never made cardamom ginger cookies but have all the ingredients on hand so will definitely try these! Thanks for the inspiration 🙂
