One-Bowl Strawberry Pancakes

If you are a fan of pancakes, you will love these One-Bowl Strawberry Pancakes. It takes literally 2 minutes to put the batter together.

As you already know, in our house, we are a big fan of pancakes. With Nutella, jam, but mostly with fresh fruit. And especially, with seasonal delicious fruit.

Right now strawberries are in full season so I take advantage of that and we eat them all the time. We eat them plain, with yogurt, granola or pancakes, like today.


Usually, I like to make pancakes a day before, so that the next day, we have pancakes ready to eat. I am aware of the fact that pancakes taste better freshly made, but I do love to have pancakes ready for me in the morning. All I have to make is coffee.  馃槈

Ingredients:

  • 300 ml of milk
  • 280 grams of flour
  • 4 tablespoons of brown sugar
  • 2 eggs
  • 1 teaspoon of vanilla powder
  • 1/4 teaspoon of baking soda
  • 2 tablespoons of poppy seeds
  • strawberries

Dump all the ingredients except the poppy seeds into a blender and blend until smooth. Pour in the poppy seeds and blend again for just a few seconds, just to incorporate them into the batter.

Let the batter rest for 30 minutes until it has some bubbles on top. In the meantime, wash and chop a few strawberries and set them aside.

Preheat a skillet and add a bit of oil of your choice (like grapeseed oil) to heat up. When it’s heated, turn the heat to low and pour batter for one pancake from the blender into the skillet. Sprinkle a few strawberries on top, and flip the pancake.

Make these steps until you finish your batter. Add more strawberries on top, pour some honey and dig in. And don’t forget to turn that coffee machine on.
