If you crave something sweet but you want it right away these No-Bake Cheesecake Cups with Grilled Apricots are perfect. It takes 10 minutes to prepare and 1 minute to eat. 🙂
Usually, we don’t really crave sweets, but sometimes we do want something sweet and delicious to eat. We made these no-bake cheesecake cups quite a few times now and they’re really good. And versatile as well!
You can add all kinds of seasonal fruit to balance the sweetness from the cream cheese. It works really good with cherries, kiwi fruit, all kinds of berries, strawberries, apricots, and so on. The list is endless.
This is my first time making grilled fruit, and it’s really easy too. And you can serve the grilled fruit with granola and yogurt, just with plain yogurt or ice-cream. It’s really delicious and easy to whip up.
- 120 g of cream cheese
- 60 ml of heavy whipping cream
- 2 tablespoons of brown sugar
- 1/2 a teaspoon of lemon juice
- 1/2 a teaspoon of vanilla powder
- 3-4 lady fingers
- 4 small cups
- 4 apricots
- 1 teaspoon of honey
Wash and cut in two the apricots. Take the stones out. Arrange the apricots in the grill pan in a single layer to grill cut side down. Let cook for 5 minutes or until it chards a little bit. Turn them over and pour one teaspoon of honey over the apricots and let cook for 5 more minutes.
In the meantime whip up the cream cheese and whipping cream with a wooden spoon or a mixer. I didn’t use the mixer because it works perfectly with a wooden spoon. In two minutes it’s mixed. Add the lemon juice, vanilla powder, and sugar and stir again.
In the small cups, add one layer of lady fingers, broke in half, or thirds, to fit into the jars.
Add two teaspoons of the cream cheese mixture into each jar, add one apricot, another layer of cream and another apricot on top.
Let the jars in the fridge to cool for one hour before serving. Sprinkle a bit of cacao if you want, but it’s optional.
