Lemon Poppy Seed Crepes

If you are a fan of everything lemon and poppy seeds, you will love these quick to make crepes. They require just a few basic ingredients.

I’ve always loved crepes, since I was a child. In my country crepes, are very common, almost everyone knows how to make them. If you are scared about making them, please don’t be. You only need a non stick skillet to make these. And they’re a pleasure to prepare.

You can make crepes in which way you most like. This is just one of many.


And let’s talk about what you can spread on these. You can add peanut butter and banana, fresh berries, all kinds of jam, Nutella, cranberry sauce like I did here: Chocolate Crêpes with Cranberry Sauce .

The possibilities are really endless. Play with the ingredients and see which you like best.

Ingredients:

  • 100 g of flour of your choice
  • 300 ml of milk of your choice
  • 50 g of brown sugar
  • 1 tablespoon of poppy seeds
  • 1 heaped teaspoon of lemon zest
  • one teaspoon of lemon juice
  • 2 eggs
  • 1/4 of a teaspoon of baking soda
  • 1/4 of a teaspoon of salt

You can do the batter into a blender or in a bowl and whisk it by hand. Either way, it’s really quick.

Into a bowl, add all the ingredients at once and whisk vigorously until everything is incorporated and you don’t see any lumps.

Leave the batter to rest for half an hour, until it starts forming bubbles on top.

I know that a lot of recipes call for melted butter into the batter but I don’t want to add any. And, I hardly used any oil in the skillet because it’s non-stick.

After 30 minutes or so, start making the crepes.

Preheat the skillet and then turn the heat down to medium to make sure they cook through. Pour a tiny bit of oil and brush it all over the skillet.

Add a small amount of batter into your skillet and tilt it very quickly to make sure the batter spreads in an even layer and it’s quite thin.

When it’s cooked on one side, flip it over with a silicon spatula and cook it on the other side for a few more seconds.

Make these steps until you finish your entire batter. Stack them nicely to cool or you can eat them hot.

Now, it’s the time to be creative and to serve them with what you love most. Fruits, jam, chocolate, chocolate spread, honey and the list goes on and on.

I like mine best with somekind of jam and lots of fruit on top.
