
Prawn Pasta with Broccolini
This Prawn Pasta with Broccolini is a simple recipe when you want something quick but delicious to eat at lunch.
Sorry I’ve been off these past few months. I’ve had a baby! 馃檪 馃檪 馃檪 And I couldn’t seem to get anything done (but I think that’s normal). After these almost 3 months, I’m starting to make a routine and to get some things done, like blogging again. 馃檪 And I’m happy to be back.
Anyone who had a baby remembers the first few months, how difficult they are, but also, how amazingly beautiful. You don’t get anything done, but that’s fine, right? 馃檪 I remember reading a post from Motherly about new moms, how we don’t get anything done, and it’s so true right now.

Between the feedings, sleeping and waking up a thousand times, when they do finally go to sleep, we’re too tired to do anything so we just lay on the couch. 馃檪 But that’s okay too. When the baby sleeps, we should sleep too, no? 馃檪
Now, seriously, let’s move on to the recipe. This makes for a great lunch, quick and easy, as long as you have already peeled prawns, or you peel them the night before. If not, it will not take more than 30 minutes to make, from start to finish.
My tip is to peel them the night before and have the ingredients ready for the next day. Since I don’t have so much time during the day, I prefer to prepare the ingredients the night before. This way, we eat healthy, and with minimum effort. You can do this even if you don’t have a baby.
Ingredients:
- 500 g of prawns
- 5 cloves of garlic, sliced
- a pinch of chili flakes
- 150 g of spaghetti
- 5 cherry tomatoes, halved
- salt and pepper to taste
- olive oil
- 200 g of broccolini
- extra virgin olive oil (to drizzle at the end)
- 3 full tablespoons of parsley, chopped
This recipe is pretty straight-forward, you’ll see. It’s super quick to make.
If you didn’t peel the prawns the night before, do that now.
Some people do it by hand, I find it easier with a small sharp knife. Leave the head of the prawn on, cut the legs from the head down and peel the skin with the knife. Set them aside.
In a pot, add enough water to boil. Add salt.
In a large skillet add the garlic cloves and sautee them for 2-3 minutes, being careful not to burn them. Add the chili flakes, parsley, prawns, tomatoes, and season with salt and pepper. Stir vigorously on high heat for 1 minute of two.

In the meantime, wash and chop the broccolini however you like. You can also use broccoli.
Add the broccolini into the boiling water with the spaghetti. Let them cook for 7-8 minutes, until al dente, if you like them this way.
When they’re cooked, pour them into the skillet, stir everything and serve immediately.
