Baby-Friendly Banana Bread

Here’s another Banana bread recipe for you, only this time is suitable for the entire family. It’s baby-friendly banana bread.

We are not a big sugar-eater family but since we have our baby, we eat even less and when I bake something, most of the time I make it sugar-free so that she can have a bite as well.

And it’s healthier.

She had banana bread before and I decided to share the recipe with you. It’s easy to make and really tasty. I honestly don’t even miss the sugar in it.

Ingredients:

  • 3 bananas
  • 200 g flour
  • 125 g plain yogurt
  • 1 tablespoon extra virgin olive oil
  • 2 eggs
  • 6 medjoul dates
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon lemon zest

You only need one bowl for this recipe and 5 minutes. You don’t even need a mixer.

Mash the bananas with a fork. Add the chopped dates.

Add the eggs, yogurt, oil, lemon zest and stir until everything is combined. A few clumps are okay.

You can add raisins or chocolate at this point.

Add the cinnamon, baking powder, soda and the flour. Mix again.

Line your desired baking sheet with parchment paper (or you can spray it with oil).
Preheat the oven to 180*C.
Pour the batter into the baking sheet and even it out.

If you use a big pan like I did, your banana bread won’t be tall. But I don’t mind.
Bake for 30-40 minutes until it’s golden and when you insert a toothpick it comes out with just a few crumbs or none.
Enjoy!
